Your choice of the following 4 entrees:
 
  1. Atchafalaya Rising:  A classic Cajun omelet stuffed with sautéed crawfish, Tasso, onions, peppers and Jack cheese.
  2. Cajun Sunrise: two scrambled eggs served with hash browns and bacon.
  3. Pancakes: your choice of buttermilk or sweet potato pancakes hot off the griddle and served with cane or maple syrup.
  4. Pain Perdu: real French toast. French bread wheels dipped in milk, eggs, vanilla, and cinnamon sugar grilled golden and topped with powdered sugar.

Your choice of the following 4 entrees:
  1. Soup & Salad: cup of any soup or bisque and your choice of a Caesar or house salad topped with grilled chicken.
  2. Crawfish Enchiladas: crawfish, onions, peppers and cheese snuggled into two tortillas and topped with crawfish sauce and served with dirty rice and a fried eggplant wheel topped with okra Creole.
  3. Southwestern Chicken Pasta: blackened chicken strips served over penne pasta in a rich, creamy crawfish sauce.
  4. Catfish Ponchartrain: fried catfish filet topped with gold-medal crawfish sauce Ponchartrain served with dirty rice and a fried eggplant wheel topped with okra Creole.
Dessert – Gateau Sirop (spice cake made with cane syrup).
